Vegetable Vermicelli Upma

                     Vermicelli: 2 cups
                     Mixed vegetables: 1/2 cup( Beans, Carrot, Peas )
                     Onion: 1/2 cup finely chopped
                     Water: 4 cups
                     Ginger: 1 inch (chopped)
                     Green chilli: 2-3 (slitted lengthwise)
                     Lemon juice: 1-2 tbpsn
                     Coconut Powder: 1 tbspn
                     Coriander Leaves: to garnish
                     Salt to taste

                  Oil: 4-5 tbspn
                  Mustard seeds: 1/2 tpsn
                  Channa dal: 1/2 tspn

  1. Dry roast the vermicelli till light golden brown. Set aside.
  2. Heat oil in a pan, add mustard seeds, Channa dal. Fry till channa dal turns light brown in colour.
  3. Add onion and green chilli.saute for 2-3 min.
  4. Add all the veggies and fry for 2 min.
  5. Add 4 cups of water and salt to taste.
  6. Bring water to boil, add fried vermicelli and cook for 5 min.
  7. Add lemon juice and garnish with finely chopped coriander leaves and grated coconut for better flavour.
