Vermicelli: 2 cups
Mixed vegetables: 1/2 cup( Beans, Carrot, Peas )
Onion: 1/2 cup finely chopped
Water: 4 cups
Ginger: 1 inch (chopped)
Green chilli: 2-3 (slitted lengthwise)
Lemon juice: 1-2 tbpsn
Coconut Powder: 1 tbspn
Coriander Leaves: to garnish
Salt to taste
Seasoning:
Oil: 4-5 tbspn
Mustard seeds: 1/2 tpsn
Channa dal: 1/2 tspn
Method:
- Dry roast the vermicelli till light golden brown. Set aside.
- Heat oil in a pan, add mustard seeds, Channa dal. Fry till channa dal turns light brown in colour.
- Add onion and green chilli.saute for 2-3 min.
- Add all the veggies and fry for 2 min.
- Add 4 cups of water and salt to taste.
- Bring water to boil, add fried vermicelli and cook for 5 min.
- Add lemon juice and garnish with finely chopped coriander leaves and grated coconut for better flavour.
